Updates & Yummy recipe.

Hey Readers.

Lets talk about how crazy life has been the past 2 months?  With some family things, a good friend passing away, too a stupid chest infection.. I haven’t had time to actually sick, and think.   Let along type a blog post.. 🙂 

But as a sit at home, coughing up a lung – I find time to write a doo-da 🙂 

As crazy as these past couple of months have been, my mind keeps redirecting me to an old Hymn..
“My hope is built on nothing less, than Jesus Blood and righteous, I dare not trust the sweetest frame,
But wholly lean on Jesus’ name.” 

But WHOLLY lean on Jesus’ name.  Man, guys – I have not been making that my first priority in the moments where I feel anxious, worried, afraid of the unknown.  Jesus.  Is RIGHT there – He wants me to take all my cares and leave them at the foot of the cross.  I often find myself trying to be the strong one – I take a lot on, not realizing how its actually affecting me.  I take it in, bottle it up – and one day I just explode (Poor sean) Boy, have I had a few explosions.  Some by myself, some with my dog, some with Sean.  

Now i’m not saying its not normal to have Temper Tantrums, because we all need to have a few of those in life.. But when God puts a gateway right in front of us and says “Use me.  Give me ALL your anger, ALL your doubt, ALL your frustrations – and I will give YOU rest” why don’t we? 

It’s such an easy thing to do, but we hesitate.  I hesitate.  
I want to challenge you too, as SOON as you feel like you are bottling something up that you know is going to eat you up later on, to let it go.  Leave it at the cross. PRAY.  Go to His word.  Find someone to talk to. Go for a run.  Blast some worship music.  

That’s my food for thought today 🙂

Speaking of food… As per doctors orders I am on a strict no wheat/gluten diet for, life. 
It was so funny – I was at a restaurant the other day – and I let her know of my condition and she goes “Oh. is this a choice?”
Absolutely-stinkin-not. I love anything gluten.  I love junk food. I love breaded chicken wings with really tasty sauce.  
Needless to say its been a really hard lifestyle change, but i’m slowly learning how to cook and make the food taste Yummy for both Sean and I 🙂 

Introducing one of my favourites that I created yesterday at the top of my head! (I was pretty impressed, Just saying – sean even liked it!) 

Toasted Sesame Seed Pasta Salad with Lentil Noodles

Ingredients:
Lentil Noodles – You can get them at St. Jacobs farmers market, fiddle heads, Maybe Grocery stores but I haven’t checked
Celery – Chopped
Broccoli – Chopped
Onions – Chopped
Cherry Tomatoes 
Mozzarella Cheese – Diced
Spinach – Chopped finely
Peanuts (unsalted)

Vinegar
Toasted seasame seed oil ( I bought mine at Fiddle heads.. SO AMAZING. I have been cooking with it ALL the time)
Regular oil
Garlic Powder
Onion Powder
Salt 
Pepper
(any other spice you wish too add – Paprika for you spice lovers)

Instructions:
Cook Noodles in salt water until they are soft, drain the water and poor some cold water on it (You’ll notice the lentil noodles will be sticky after, don’t worry – it goes away)  Let it cool down.
Chop up all your vegetables into a bowl and put into the pasta..
In a separate bowl throw all your spices in together, followed by the regular oil & Vinegar.  Mix well 🙂
Add the mixture to the paste and mix thoroughly. Let it sit for about 5 minutes..

While sitting…
Finally chop some peanuts (If you have a nut allergy, the recipe still taste amazing without the peanuts) – I had about 1/4 cup.

After the 5 minutes, add the peanuts – the drizzle the Toasted Sesame seed oil over top of the pasta and mix well!!
Let it sit in the fridge for a few hours…
And tada!! Yummy goodness.

Almond Flour Biscuits

Almond Flour Biscuits

Ingredients:
1 cup almond flour
4 egg whites
1/3 cup butter chilled
1 teaspooon baking powder
1/2 teaspooon salt

(so sad the picture isn’t working!!)

Recipe:

1. Pre-heat to 350 degrees.
2. Combine flour and butter in food processor.
3. Pulse to combine until mixture starts to clump.
4. Add remaining ingredients and mix well.
5. Divide evenly in four portions on pan lined with parchment paper.
6. Bake for 25 minutes until lightly browned.
7. Enjoy

Winter Blues

Ok, who is OVER this winter?! Honestly, it has been cold since the end of September & I am sick of it.  I don’t know about you, but winter for me brings on COMFORT eating and lazy exercising (aka no exercising).  My dear friend Arissa and I have decided to say goodbye to the winter blues and hello to preparing to live a healthier lifestyle, despite this awful depression.  Ps. 15CM of snow tomorrow, are you kidding me?

First off, we have decided to take on the Paleo Diet! http://thepaleodiet.com/ We sat down and made a list of foods we can & can’t eat, and to our surprise, the diet is extremely flexible and there are so many creative recipes you can use! (Thank-you pinterest!)  The one thing I absolutely love about this diet is that at the end of the day, I’m not feeling hungry.  I feel so full and satisfied.  

Another challenge we are taking on is Hot yoga (103 F, trust me.. It is NOT for everyone… We left that room drenched from head, to toe)!  We both signed up for a membership and attended our first last today.  We have both done yoga & hot yoga before, but nothing like the Moshka studio!  We are challenging ourselves to 3 times a week plus running & weight training.  My personal goal with going to yoga is to gain strength back, being off from surgery I have lost so much strength – Especially in my right hand, so I am excited to gain it back!

Water, Cinnamon & Apple slices.  Yep.  That is all, trust me – You will pee a lot.

Oh hi!

Hi Everyone!

People have been asking me to start blogging again, I was super hesitant because I didn’t keep it up last time.. But I am going to make sure I make it my new hobby! (If in a month you see no posts, I am so sorry 🙂 haha!)

My life has drastically changed, for the better!  I married the love of my life after 5 glorious years of dating!! Marriage to Sean has been such an incredible blessing.  It is SO funny, because people have warned us “The first year of marriage is the hardest” and now, being married for almost a year.. I feel sad for those people!  This has been the best year of my life.  We were blessed to purchase our first home together (which we LOVE & have had such a joy making it our own), we are able to live together with our little lexi girl, trust me – she LOVES seeing her daddy everyday (Don’t judge me, he’s her dadda’ ;)), We had the wedding of our dreams surrounded by our closest friends & family.. and so so much more.

I am hoping to post DYI projects I do in my house, some decor I have taken on, healthy things! (currently taking on the 30 days Paleo Diet challenge with my girl!), how God is working in my life, etc!

Anyways, until next post.. Which I probably will work on right after this 🙂
